This is a wonderfully simple and nutritious raspberry smoothie that tastes as good as it looks!

Berries are some of the most nutrient-dense, antioxidant-rich foods on the planet, and I make a point of eating them multiple times per week.

Raspberries are loaded with vitamins, minerals, fibre, and disease-fighting phytochemicals.  Specifically, these little red gems are rich in antioxidants such as ellagic acid and anthocyanins, which are believed to have benefits against heart disease, cancer, and cognitive decline.  A half cup contains only 3 grams of carbs, making raspberries a good choice for those on low-carb or keto diets.  

For 2 servings, blend together until smooth:

  • 1 cup frozen raspberries

  • 1 cup canned coconut milk (full-fat or light)

  • 1/2 cup unsweetened coconut water, adjusted to desired consistency (optional, omit for thicker smoothie)

  • 1 to 2 Tbsp chia seeds (optional)

  • 1 tsp pure vanilla extract

  • Lakanto sugar-free monk fruit sweetener, pure stevia, or raw honey (non-vegan), adjusted to taste (optional)

  • optional toppings: Eaton Hemp toasted hemp seeds, grain-free granola, or toppings of choice

Note: If serving for breakfast or a more substantial snack, I boost this shake with protein.  Good options here include:

  • 1/2 cup plain Greek yogurt (non-vegan), or

  • 1/2 cup silken tofu, or

  • 2 Tbsp Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder, or

  • 2 Tbsp Further Food collagen (non-vegan)
