APPETITE FOR APRICOT SMOOTHIE

My chicklets love to grocery shop with me and plan our next smoothie creations.  They requested an apricot smoothie, and we all loved how it came together.  I blended fresh apricots with peaches, ginger, nut butter, chia seeds and turmeric to make a delightfully fresh, sweet & tangy superfood sensation!

Apricots have a slightly musky sweet-tart taste with hints of peach and plum.  Their season in North America runs from late spring through to the end of the summer.  They are typically found in Ontario farmers' markets in July and August.  Apricots are rich in disease-fighting antioxidants and provide a good source of minerals, fibre, and vitamins such as A & C.

Ginger provides a little spicy kick alongside big benefits for gut and body health.  It has been widely used for centuries because of its anti-inflammatory, anti-nausea, analgesic and pro-digestive effects.  Research also suggests that consumption of ginger can boost immunity and reduce the risk of obesity, diabetes, stroke and heart disease.

For 3 servings, blend together until smooth:

  • 1 1/2 cups unsweetened almond milk

  • 2 cups diced fresh apricots

  • 1 cup frozen peaches

  • 3 Tbsp almond butter (optional)

  • 1 Tbsp chia seeds

  • 1/2 Tbsp or more grated fresh ginger, adjusted to taste

  • 1/2 tsp ground turmeric plus a pinch of black pepper (optional)

  • Lakanto sugar-free monk fruit sweetener, pure maple syrup, or sweetener of choice, adjusted to taste
