BEET & WATERMELON WIZARD SMOOTHIE
/Even in the cooler months, I love a refreshing smoothie after a hardcore workout. With beets, cauliflower, watermelon, coconut water, and collagen/protein, this is one awesome recovery drink! And the kefir will help to keep your gut happy, too!

Watermelon is 92% water and contains only 46 calories per cup. However, it is packed with vitamins like C and A, as well as disease-fighting phytonutrients including the carotenoid antioxidant lycopene. In addition to giving watermelon its beautiful red colour, lycopene is believed to help reduce cholesterol and blood pressure as well as the the risk of cancer, stroke, diabetes, and even osteoporosis!
For 2 servings, blend together until smooth:
2 cups frozen watermelon chunks
1 cup steamed-then-frozen cauliflower
1/2 to 1 cup purple beets (steamed, peeled, diced and chilled)
1 cup coconut or other milk-based kefir
1 cup unsweetened coconut water
2 Tbsp Nuzest Clean Lean Just Natural or Smooth Vanilla protein powder or 2 Tbsp Further Food Collagen or 1 Tbsp of each
2 Tbsp white chia seeds
Lakanto sugar-free monk fruit sweetener, raw honey (nonvegan), or stevia, adjusted to taste
