PEANUT BUTTER PROTEIN BARS (or nut butter)

These homemade no-bake protein bars are super yummy, super simple to make, and packed with healthy fats, fibre, and plant-based protein.  Works for me! 

I played around with this recipe a lot before finally writing it up (my taste testers were rather happy at least!).  The bottom line is that the amount of coconut flour needed is quite variable and depends on how “drippy” your nut butter is and how moist you like your bars.  I would suggest adding the dry ingredients slowly, blending well, and adjusting as needed. If your nut butter is thick and your bars seem too dry, you can add a touch of melted coconut oil. I like these bars moist, so my personal favourite version uses Fatso peanut butter (it’s nice and drippy!), 2 tablespoons of ground chia seeds, and approximately 1 tablespoon of melted coconut oil.

Peanut Butter Protein Bars can be stored in the fridge or freezer.  My kids like them soft and chewy from the fridge, but I prefer to store them in the freezer and take them out just a few minutes before snacking! 

Ingredients for 6 bars:

  • 3/4 cup peanut butter or nut butter of choice (I like to use Fatso Classic or Salted Caramel peanut butter)

  • 1/2 cup Nuzest Clean Lean Smooth Vanilla protein powder

  • 1/2 cup Lakanto Powdered sugar-free monk fruit sweetener

  • 2 Tbsp ground chia seeds (optional)

  • 1 tsp pure vanilla extract

  • pinch salt

  • 0 to 4 Tbsp coconut flour (see note above)

  • 0 to 2 Tbsp coconut oil, melted (see note above)

  • 1/4 to 1/3 cup sugar-free chocolate chips for topping (optional)

Directions:

  1. Line a standard loaf pan with parchment (or use a silicone loaf pan like I did).

  2. Put peanut butter, protein powder, sweetener, ground chia, vanilla, and salt into a food processor container and blend well, scraping the sides and bottom with a spatula as needed. Add coconut flour or melted coconut oil as needed for desired consistency (see note above).

  3. Scoop the batter into the prepared pan, press down firmly, and smooth the top. Sprinkle with chocolate chips as desired.

  4. Freeze until firm before cutting into bars. Serve cold from the fridge or freeze (see note above).

Peanut Butter Protein Bars can be stored in an airtight container in the fridge for a week or the freezer for up to 2 months.
