COTTON CANDY OVERNIGHT OATS
/Ok, so how fun are these? My Cotton Candy Overnight Oats have been a huge hit with all of my taste testers, kids and grown-up kids alike!
Bonus is, they are free of added sugar but packed with fibre, healthy fats, and plant-based protein to start your day off right!
For this recipe, I used Nutpods Cotton Candy keto-friendly dairy-free creamer that I bought from Natura Market (@naturamarketca). If you don’t have access to Nutpods, canned coconut milk will also work, but you will need to rely on the colour and grapes for the “cotton candy” effect!
Ingredients:
1/2 cup gluten-free old-fashioned rolled oats
1/2 cup Nutpods Cotton Candy creamer (see note above)
1/4 cup plain probiotic Greek or non-dairy yogurt
1 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder (optional)
1 tsp white chia seeds
1/2 to 1 tsp red beet crystals (optional, for pink colour)
1/2 tsp pure vanilla extract (optional)
pinch salt
Lakanto sugar-free monk fruit or sweetener of choice, adjusted to taste
optional toppings: cotton candy grapes, berries, coconut chips, grain-free granola, sugar-free chocolate chips, diced Love + Chew Superfood Cookie, or toppings of choice
Directions:
Put oats, Nutpods, yogurt, protein powder, chia seeds, beet crystals, vanilla, and salt in a bowl or single-serving mason jar and stir to combine. Sweeten to taste.
Cover and refrigerate overnight, or for a minimum of 6 hours. Stir and add additional milk as needed for desired consistency.
Cotton Candy Overnight Oats can be stored in an airtight container in the fridge for up to 5 days. Serve chilled with your choice of toppings.
