MAPLE "MOUSSE"

Growing up in a small town here in Ontario, my family helped with the local maple syrup harvest each year.  The season runs from February to April, so every time spring rolls around, I get serious maple cravings.  And boy did this mousse ever hit the spot!

Versions of this yogurt-based “mousse” appear weekly at my house.  It’s easy, nutritious, and delicious, and great for breakfast, snack time, or even dessert!

Here I have a keto-friendly maple version that is absolutely divine!

Ingredients for 2 servings:

MAPLE MOUSSE WITH LAKANTO AND FATSO.jpg
  • 1 cup thick plain Greek or non-dairy yogurt

  • 3 Tbsp Fatso Maple almond butter

  • 1 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder (optional)

  • pinch of salt

  • Lakanto sugar-free monk fruit sweetener, or sweetener of choice, adjusted to taste

  • optional toppings: berries, Rawcology chocolate coconut chips, granola, sugar-free chocolate chips, Eaton Hemp Maple Cinnamon toasted hemp seeds, a drizzle of almond butter and/or Lakanto sugar-free Maple (or pure maple syrup for non-keto), or toppings of choice

Directions:

  1. Put yogurt, almond butter, protein powder, and salt into a medium bowl and “whip” together, just until smooth. Sweeten to taste.

  2. Serve with your choice of toppings and enjoy!

Maple “Mousse” can be stored in an airtight container in the fridge for 3 to 4 days. ⠀
