3-INGREDIENT CHOCOLATE CHIA PUDDING
/A 3-ingredient breakfast that’s super easy to make, tastes delicious, and is packed with antioxidants, fibre, healthy fats, and protein? Count me in!
Ingredients for 2 servings:
1 cup canned coconut milk (full-fat or light), adjusted for desired consistency
2 Tbsp Nuzest Clean Lean Rich Chocolate protein powder or Further Food chocolate collagen (nonvegan) or both (see note below*)
1/4 cup chia seeds
Optional add-ins (all here):
2 Tbsp almond butter
1/2 tsp pure vanilla extract
pinch salt
Lakanto sugar-free monk fruit or sweetener of choice, adjusted to taste
*Notes: You may need to add an extra tablespoon or two of milk if both protein powders are used. If you prefer to avoid protein powder, substitute raw cacao powder plus sweetener to taste.
Directions:
Put 1 cup coconut milk, protein powder and/or collagen, and optional add-ins into a blender container and blend until smooth. Sweeten to taste.
Add chia seeds and pulse-blend until just combined (or blend fully if prefer smooth consistency).
Pour into a bowl or single-serving mason jars and cover.
Allow to sit for 10 minutes, then whisk or shake well. Cover and refrigerate overnight.
In the morning, stir and add additional sweetener or milk as needed for desired taste and consistency. Serve cold or warm with your choice of toppings.
3-Ingredient Chocolate Chia Pudding can be stored in an airtight container in the fridge for up to 5 days.
