TANDOORI SALMON (Air Fryer or Grill)
/I absolutely love salmon and this Tandoori version is a long-time family favourite. It can be made on the grill or in the air fryer. Here I served it with loads of veggies and zero-carb konjac rice for a fresh, nutritious, and super-satisfying low-carb dinner.
Ingredients for 6 servings:
6 cloves garlic, minced
2 Tbsp grated fresh ginger
1 1/2 Tbsp garam masala (see note below*)
1 1/2 Tbsp fresh lemon juice
1 1/2 Tbsp avocado oil
1 1/2 Tbsp water
1/2 cup plain Greek yogurt
2 pounds fresh salmon, cut into 6 fillets
optional cilantro and/or Cucumber Raita for serving
*Note: This recipe also works well with curry powder, chaat masala, or even Chinese Five Spice in place of garam masala.
Directions:
Combine garlic, ginger, garam masala, lemon juice, oil, water, and yogurt. Spread on salmon and allow to marinate in the fridge for approximately 2 hours.
Grill Option
Preheat grill to medium-high. Remove salmon from the marinade. Spray the grill and fillets with avocado oil then place on the grill flesh-side down. Cook for 2 to 3 minutes or until grill marks form. Gently flip over, close the lid, and cook for another 5 minutes or longer, until the salmon is just cooked through and flakes easily with a fork. Serve immediately with chopped cilantro and Cucumber Raita on the side.
Air Fryer Option
Preheat air fryer to 400F and lightly grease with avocado oil. Remove salmon from marinade and place in the fryer, leaving room between each piece for air to flow. Lightly spray the top of the salmon with avocado oil and cook for 7 to 11 minutes, depending on the thickness of the fillets. Serve immediately with chopped cilantro and Cucumber Raita.
