COCONUT ALMOND BLISS BALLS (low carb & refined sugar free)

Are you lookin’ for the perfect nutritious-and-delicious teatime treat?  Then look no further!  These little low-carb balls of bliss are absolutely delish and crazy simple to make.  Better still, they contain no dairy, grains, or refined sugar, but are packed with healthy fats & protein.

Ingredients for 8 balls:

  • 3/4 cup almond butter (I used crunchy)

  • 1/2 cup unsweetened desiccated coconut, plus more for rolling

  • 1 to 2 scoops Further Food collagen peptides or Nuzest Clean Lean Just Natural or Smooth Vanilla protein powder (optional)

  • 2 Tbsp shelled hemp seeds (gluten-free if needed)

  • 1 to 2 Tbsp coconut oil, melted

  • 2 tsp pure vanilla extract

  • 1/8 to 1/4 tsp sea salt, adjusted to taste

  • optional Lakanto sugar-free monkfruit sweetener, pure stevia, or sweetener of choice, adjusted to taste

  • optional add-ins or toppings: 2 Tbsp chia seeds, raw cacao nibs, dark chocolate chips, or finely chopped nuts for extra crunch!

Directions:

  1. Put almond butter, coconut, collagen or protein powder (if using), hemp seeds, 1 Tbsp coconut oil, vanilla, and salt into food processor or blender container.  Blend until well-mixed, adding second Tbsp of coconut oil if mixture seems dry. Sweeten to taste.

  2. Stir in chia seeds, cacao nibs, chocolate chips, nuts or seeds as desired.

  3. Scrape sticky mixture onto a plate or parchment paper.  Roll into approximately 8 balls. Roll formed balls in desiccated coconut or toppings of choice.  

Coconut Almond Bliss Balls can be stored in an airtight container in the fridge for a week, or the freezer for up to 2 months.
