"OPEN SESAME!" SMOOTHIE
/Berries and tahini blend beautifully to make this simple and protein + healthy fat + fibre + antioxidant-rich breakfast of champions!
Tahini is made by grinding sesame seeds. The unhulled paste is more nutrient-rich since it is made from intact seeds. Tahini is loaded with vitamins and minerals including calcium, magnesium, copper, zinc and iron. It is easy to digest; a great source of protein and healthy fat; and rich in anticancer, heart-healthy plant lignans as well as methionine, which helps with liver detoxification.
For 2 servings, blend together until smooth:
1 1/2 cups frozen berries (I like to use a combination of blueberries and blackberries)
1 to 1 1/2 cups unsweetened coconut water, adjusted to desired consistency
2 to 3 Tbsp tahini, adjusted to taste (or substitute nut or seed butter of choice)
2 scoops Further Food collagen or Nuzest Clean Lean Just Natural or Smooth Vanilla protein powder
Lakanto sugar-free monk fruit sweetener, pure stevia, maple syrup, or raw honey (nonvegan), adjusted to taste (optional)
optional toppings: sesame seeds, Giddy Yo raw cacao nibs, berries, granola, or toppings of choice
