This is a spin on my cauliflower no-oats porridge.  Honestly, don’t knock it till you’ve tried it — my family and taste-testers didn’t know it was cauli until I told them.  Sooooo good!

As in my original recipe, this pre- and probiotic version is packed with antioxidants, fibre, healthy fats & protein for a complete and satisfying meal.

SHIRATAKI (KONJAC) NOODLES

Have you tried shirataki or konjac noodles before?  They’re a great zero calorie, grain-free, carb-free alternative to traditional pasta.  Sounds crazy, I know, but they’re actually really good and super versatile!

Shirataki noodles originated in Japan and are made from the konjac root.  They are gelatinous in texture and a good source of prebiotic resistant starch, being composed of 97% water and 3% indigestible fibre.  This means that these noodles provide no calories or nutrients to our bodies, but they feed the good bacteria in our guts!

SUN+ BUTTER

Sunflower seed butter (SSB) is made from grinding roasted sunflower seeds.  SSB has gotten more popular in recent years as a nut-free alternative to peanut butter.  It is rich in protein (3 grams per Tbsp) and healthy fats as well as vitamin E and essential minerals like magnesium and manganese.

I call this “Sun+” because in addition to the sunflower seeds, I have added chia, flax and hemp seeds for extra minerals, protein, antioxidants, and healthy omega 3 fatty acids.

Squash is one of my favourite fall foods.  It is incredibly versatile and can be enjoyed in anything from soups and stews to smoothies and baking.  Here I have cooked buttercup squash in the slow cooker (!!!) and then turned it into a super satisfying breakfast bowl with the addition of protein, nut butter, and warm spices.  Honestly, though, I could eat this delicious and nutritious recipe any time of the day!
