CAKE TRUFFLES

These Cake Truffles are fun and festive and super easy to make. They have been a huge hit with all of my taste testers, kids and grown-up kids alike.

Here I used my favourite sugar-free keto and paleo-friendly ZenSweet Vanilla Bean Cake mix and a homemade vegan cream cheese icing. However, you can make these with your cake and icing of choice. You’ll need 1 to 1 1/4 cups icing for a standard 8-inch round cake.

Ingredients (for 30 balls, more or less depending on how big you make them):

  • ZenSweet Vanilla Bean Cake, prepared according to package directions and fully cooled

  • 1 small container (6.5 oz) Spread’Em Kitchen vegan cream cheese or cream cheese of choice, at room temperature

  • 1 cup powdered monk fruit sweetener

  • 1 tsp pure vanilla extract

  • optional chocolate coating: 3/4 cup sugar-free chocolate chips plus 2 tsp coconut oil

  • optional add-ins or toppings: unsweetened shredded coconut, sugar-free chocolate or butterscotch chips, sprinkles

Directions:

  1. In a large bowl, beat together vegan cream cheese, monk fruit sweetener, and vanilla until smooth.

  2. Break the cake into fine crumbs (this can be done by hand or in a food processor) and add to the cream cheese frosting. Stir well to combine and mix in optional add-ins as desired such as shredded coconut, chocolate chips, or sprinkles.

  3. Roll the truffle mixture into tablespoon-sized balls. Place the balls on a parchment lined baking sheet and freeze for 1 hour.

Optional Chocolate Coating

  1. Put the chocolate chips and coconut oil in a small pot and melt together over low heat, stirring constantly. Remove from heat.

  2. Put one truffle on top of a fork and dip into the chocolate to coat thoroughly. Tap to remove the excess chocolate then place on a parchment-lined baking sheet. Repeat with the remaining truffles and sprinkle with toppings as desired. Chill before serving.

Cake Truffles can be stored in an airtight container in the fridge for a week or frozen for longer.
