SPICED CANDIED NUTS

These Spiced Candied Nuts make a wonderful snack. Plus they’re great thrown in salads or on top of pancakes, waffles, chia pudding, or porridge. You can buy candied nuts, but they’re loaded with refined sugar and much more expensive than raw nuts. The good news is that they're quick and easy to make, and you can control the amount of spice and sweetness. As an added bonus, your house will smell heavenly while they’re baking!

Ingredients for approximately 2 1/2 cups:

  • 1 cup raw pecans

  • 1 cup raw walnuts

  • 1/2 cup raw pumpkin seeds

  • 2 Tbsp coconut oil

  • 3 Tbsp maple syrup or Lakanto Maple sugar-free monkfruit sweetener

  • 1/2 tsp sea salt

  • 1/8 tsp cayenne pepper

  • 1/8 tsp freshly ground black pepper (or 4 turns of grinder)

Directions:

  1. Preheat oven to 325 F and line a baking sheet with parchment.

  2. In a small pot over medium-low heat, melt together oil and syrup. Pour over nuts and seeds and toss to coat.

  3. Add spices and mix thoroughly.

  4. Spread on prepared baking sheet and bake for 15 minutes, gently turn, and cook for an additional 10 minutes or until nicely golden brown. Let cool before serving or storing.

Spiced Candied nuts can be stored in an airtight container at room temperature for one week, in the fridge for four weeks, or in the freezer for two months.
