SALTED CARAMEL CASHEW FREEZER FUDGE

These creamy, decadent little fudge cups have been a huge hit with all of my taste testers. Better still, they’re super simple to make and packed with healthy fats and protein. Trust me here and give the recipe a go — your future self will thank me!
Ingredients for 12 fudge cups:
1 cup “drippy” cashew butter (I like Artisana)
2+ Tbsp coconut oil, melted, adjusted to desired consistency
1/4 cup Further Food vanilla collagen peptides or Nuzest Clean Lean Smooth Vanilla protein powder or 2 Tbsp of each
1/4 cup Lakanto Maple sugar-free monk fruit sweetener or pure maple syrup, or sweetener of choice, adjusted to taste
1 Tbsp Plant Burst or Organika maca powder (optional)
1 tsp pure vanilla extract
1/2 to 1 tsp pure almond extract (optional, adjusted to taste)
1/4 tsp sea salt
toppings: sprinkle of flaked salt plus Brazil nuts or other nuts/seeds, desiccated coconut, chocolate coconut chips, chocolate chips or chunks, or toppings of choice
Directions:
Put cashew butter and 2 Tbsp melted coconut oil in a medium bowl and beat with a hand mixer. Add protein powder, sweetener, maca, extracts, and salt, and continue to beat, just until smooth. Adjust the sweetener, extracts, and salt to taste, and add another tablespoon or two of coconut oil if the mixture is too thick or dry.
Scoop fudge into muffin cups lined with silicone liners. Sprinkle with flaked salt and additional toppings as desired and freeze until firm. Serve cold.
Salted Caramel Cashew Freezer Fudge can be stored in an airtight container in the freezer for up to 2 months.
