ROASTED BROCCOLI (Air Fryer or Oven)

Want to make broccoli fun again?  Throw it in the air fryer!

Seriously, though, my chicklets weren’t huge fans of having “a side of broccoli” until I started roasting/air frying it.  Now we go through at least a couple heads every week. The broccoli comes out tender and juicy in the middle with those irresistible crispy roasted edges, all in a matter of minutes.

Broccoli is a nutrient-dense cruciferous vegetable.  It is rich in minerals and vitamins including C & K, as well as soluble fibre.  Furthermore, broccoli contains bioactive compounds that may help to reduce inflammation, boost immunity, improve blood sugar control, and even protect against certain types of cancer.

Ingredients:

  • 3 to 4 cups broccoli florets (smaller ones recommended)

  • 1 to 2 Tbsp extra-virgin olive oil

  • seasoning salt & fresh ground pepper, adjusted to taste (or salt & pepper plus 1/2 tsp each onion & garlic powder, or seasonings of choice)

  • optional lemon and/or grated Parmesan or nutritional yeast for serving

Air Fryer Directions:

  1. Preheat air fryer to 400ºF.

  2. Toss broccoli with olive oil and seasoning so evenly coated.

  3. Add 2 Tbsp of water to the bottom of the fryer (helps prevent burning) and place broccoli in a single layer in the air fryer basket. Do in batches if needed.

  4. Cook for 6 to 10 min (or until desired level of doneness), shaking halfway.

Oven Directions:

  1. Preheat oven to 425ºF.

  2. Toss broccoli with olive oil and seasoning so evenly coated.

  3. Spread in a single layer on a parchment-lined baking sheet and roast for 17 to 20 min (or until desired level of doneness), flipping halfway.

Serve warm with a squeeze of lemon and sprinkle of Parmesan or nutritional yeast as desired. Leftovers can be stored in an airtight container in the fridge for 5 days.
