MAPLE MUSTARD SALMON
/This nutritious-and-delicious Maple Mustard Salmon is super quick and easy and can be prepared in the oven or air fryer.
Ingredients for 4 servings:
4 (4 to 5-oz) salmon fillets
2 Tbsp mustard (I like to use Kozlik’s Amazing Maple, Sweet & Smokey or Dijon)
2 Tbsp sugar-free maple syrup or pure maple syrup
1 Tbsp extra-virgin olive oil
1 Tbsp gluten-free coconut aminos (or soy sauce)
2 cloves garlic, finely minced
1 Tbsp finely minced shallots (optional)
Kosher salt and freshly ground black pepper
spray avocado oil
Directions for the air fryer:
In a small bowl, whisk together mustard, maple sweetener, olive oil, coconut aminos, garlic, and shallots.
Season the salmon with salt and pepper and spread the maple mustard mixture all over the fillets. Marinate for 30 minutes at room temperature or for 60 minutes in the fridge.
Preheat the air fryer to 400ºF and lightly spray with avocado oil.
Place the salmon in the air fryer (leaving room between each piece for air to flow) and cook for 7 to 10 minutes, depending on the thickness of the salmon.
Note: For an optional sauce, reserve the marinade and cook it in a small skillet for a couple minutes over medium-high heat. Serve with the cooked salmon.
Directions for the oven:

While the salmon is marinating, heat the broiler and place a cast iron skillet in the oven under the broiler for about ten minutes.
Put the salmon fillets along with any remaining marinade in the preheated skillet, well-spaced and skin side down. Broil for 6 to 10 minutes, watching them closely to make sure they don’t overcook. Broiling time will depend on the thickness of your fillets and how well-cooked you like them. For medium rare salmon (my preference), you will likely want to broil for no more than 7 minutes.
