GREEN DREAM TEAM SMOOTHIE

I love the combo of jackfruit and leafy greens!  Fresh or frozen jackfruit is periodically available at Asian and specialty grocery stores here in Toronto.  However, if jackfruit is not accessible to you, pineapple or mango can certainly be substituted.

Here I have turned a tropical treat into a nutrient-dense dream by using kale, chia seeds, and matcha powder (optional).

Matcha is loaded with vitamins, chlorophyll, and antioxidants including EGCg.  These powerful phytochemicals have been found to help boost metabolism and burn calories while simultaneously detoxifying the body, enhancing mood, promoting concentration, and calming the mind.

For 2 servings, blend together until smooth:

  • 1 cup fresh or frozen jack fruit pods (or substitute pineapple)

  • 1 cup canned coconut milk (full-fat or light)

  • 1/2 to 1 cup unsweetened coconut water (or additional coconut milk), adjusted to desired consistency

  • 2 handfuls baby kale or spinach

  • 2 Tbsp Nuzest Clean Lean Just Natural or Smooth Vanilla protein powder (vegan) or Further Food collagen (non-vegan)

  • 1 /2 to 1 tsp high-grade matcha powder (optional), adjusted to taste

  • 1 to 2 Tbsp chia seeds

  • Lakanto sugar-free monk fruit sweetener, pure stevia, raw honey (non-vegan), or sweetener or choice, adjusted to taste
