HOMEMADE PALEO MUESLI (dry mix)

I love granola and oats as much as the next food blogger, but I’m also big on switching things up.  Not only is it a good way to eat a range of nutrients, but playing around with tastes and textures keeps things fun & interesting.

Muesli differs from granola in that it is a mixture of raw cereals (most often oats), dried fruit, seeds and nuts, whereas granola is baked.  Muesli is typically soaked with dairy or nondairy milk, yogurt, or fruit juice before eating to make it easier to chew and digest.  

This is a grain-free, paleo, keto-friendly version of muesli.  It's super easy to throw a big batch together as part of meal prep and then have on-hand for a couple weeks.  Try mixing it with your favourite milk or yogurt, adding some to your overnight oats, or tossing a handful into or on top of a smoothie.  I've also provided a recipe for my Golden Paleo Bircher Muesli.  This comes together in just minutes using the dry mix, is packed with fiber, healthy fats and protein, and was a huge hit with my taste-testers!

Ingredients:

  • 3 cups unsweetened coconut flakes

  • 2 cups raw sunflower seeds

  • 1 cup sliced almonds

  • 1 cup raw or roasted unsalted cashews

  • 1 cup raw pumpkin seeds

  • 1/2 cup macadamia nuts

  • 1/2 cup raw hazelnuts

  • 1/2 cup dried blueberries (optional)

Directions:

Pull all ingredients in large bowl and stir to combine.  Will keep in an airtight container at room temperature for up to 2 months.
