GRILLED AVOCADO
/If you are an avocado fan like me, this is definitely one to try! Grilled avocado is creamy and luscious with a wonderful earthy, smoky flavour. Serve it for breakfast, lunch, or dinner as part of a main or side dish. Here are some ideas on how to enjoy it:
as a side dish topped with pico de gallo, Rich Greens microgreens or fresh herbs, Eaton Hemp hemp hearts, and a drizzle of extra-virgin olive oil (pictured)
sliced on top of salad, tacos, nachos, or toast
as a light main, filled with ceviche or chicken, tuna, chickpea, or quinoa salad
diced and added to fresh mango or tomato salsa
inside a sandwich, grilled cheese, or quesadilla
made into homemade guacamole (on toast below)
Avocados are incredibly nutritious and contain a wide range of vitamins and minerals (vitamin K, folate, potassium) as well as heart-healthy fats, fibre, and powerful disease-fighting antioxidants like lutein and zeaxanthin. Research suggests that avocado consumption may help to lower cholesterol levels; relieve arthritis symptoms; promote eye health, healthy blood pressure & weight control; and even reduce the risk of certain cancers.
Ingredients:
2 firm but ripe avocados
juice from one lime or lemon (optional)
1 to 2 Tbsp extra-virgin olive oil
salt & pepper, adjusted to taste
pinch or two of chili powder, or seasonings of choice (optional)
Directions:
Preheat grill to medium-high.
Slice avocados in half and remove the pits. Drizzle the cut sides with fresh lime juice (optional) then brush with olive oil. Sprinkle generously with salt and pepper and a pinch or two of chili powder (optional).
Place cut sides down on grill and cook for 5 minutes or until grill marks form.
Remove from grill, adjust seasoning to taste, serve (see ideas above) and enjoy!
