GREEN GUAVA GODDESS SMOOTHIE

This smoothie was inspired by 2 things I love: fresh guavas and vegan green goddess salad dressing!  And the name is fitting here, since guavas are tasty little superstars fruits that can help keep us looking and feeling our best.

Guavas are very nutrient-dense since they are low in calories but rich in vitamins, minerals and even protein.  They are also a wonderful source of natural astringents, fibre, antioxidants and lycopene.  As a result, guavas provide numerous potential health benefits for the immune system, heart, eyes, gastrointestinal tract, brain, and skin.

For 2 servings, blend together until smooth:

  • 1 1/2 cups unsweetened coconut water

  • 1 cup fresh diced guava

  • 1/2 cup canned organic coconut milk, light or full-fat (or additional coconut water)

  • 1/4 ripe avocado

  • squeeze of fresh lemon juice, adjusted to taste

  • handful of fresh mint

  • 1/2 to 1 tsp matcha powder (optional)

  • sugar-free monk fruit sweetener, pure stevia, or raw honey (non-vegan), adjusted to taste

Sprinkle with sesame seeds (optional) and serve!
