FUDGY BLACK BEAN BROWNIES

These black bean brownies are moist and fudgy with the perfect amount of sweetness. They’re free of added sugar, packed with healthy fats and protein, and suitable for vegan and gluten-free diets. They’re basically healthy brownies that don’t taste healthy!

In terms of nutrition, black beans really pack a punch.  One cup of these nutrient-rich legumes contains almost 15 grams of fibre — including gut-friendly prebiotic resistant starch — and over 15 grams of protein.  Furthermore, black beans are an excellent source of vitamins and minerals including zinc and folate, as well as flavonoid antioxidants.

Ingredients for 8 squares:

  • 15-oz can black beans, drained and rinsed thoroughly (approximately 1 3/4 cups drained)

  • 1/2 cup Fatso Classic peanut butter (or nut or seed butter of choice) 

  • 1/2 to 3/4 cup Lakanto Golden sugar-free monk fruit sweetener (or coconut sugar), adjusted to taste

  • 1/4 cup Nuzest Clean Lean Rich Chocolate protein powder

  • 3 Tbsp Nutpods Chocolate sugar-free dairy-free creamer or unsweetened almond milk

  • 2 Tbsp Giddy Yo raw cacao powder, adjusted to taste

  • 2 tsp pure vanilla extract

  • 1/4 tsp baking powder

  • 1/4 tsp baking soda

  • 1/4 tsp salt

  • 1/2 cup sugar-free chocolate chips (or butterscotch or salted caramel chips or a combination)

Fudgy Black Bean Brownies (using a combination of sugar-free chocolate, butterscotch, and salted caramel chips), ready for baking.

Directions:

  1. Preheat oven to 350F and grease or line an 8x8 inch baking pan with parchment.

  2. Put the black beans, peanut butter, sweetener, protein powder, creamer or milk, cacao powder, vanilla, baking powder, baking soda, and salt into a food processor or blender container.  

  3. Blend well, scraping the sides and bottom with a rubber spatula as needed, until a uniform smooth consistency is achieved. 

  4. Fold in the chocolate chips and scrape the batter into prepared pan.  Smooth the top and sprinkle with additional chips as desired.

  5. Bake for 15 to 20 minutes or until they look almost done and are starting to brown around the edges.  You want to slightly under-bake these brownies so they stay moist and fudgy.

  6. Remove brownies from the oven and cool completely before cutting and serving.

Black Bean Brownies can be stored in an airtight container in the fridge for a week or the freezer for up to 2 months.
