CHOCOLATE ORANGE CHIA PUDDING
/Chocolate and orange are a match made in heaven (I mean, do you remember those Terry’s Chocolate Oranges?). So this easy, make-ahead Chocolate Orange Chia Pudding is a must try. Bonus is, it’s packed with antioxidants, fibre, healthy fats, and protein, too!
For my recipe, I used doTERRA Wild Orange essential oils from Elevays @elevayshealth. It was a wonderful way to introduce a bright orange flavour while still keeping the pudding low-carb and keto-friendly.

For those of you unfamiliar with chia seeds, they have a mild nutty taste and are rich in fibre, minerals, plant protein, antioxidants, and healthy fats. In fact, a 2 tablespoon serving of chia seeds contains approximately 4 grams of protein and 12 grams of carbohydrate, of which 11 grams are actually fibre! When you mix chia seeds with liquid and allow them to sit overnight, they form a tapioca-like pudding. The consistency is similar to rice pudding, although it can also be blended to make it smooth.
Ingredients for 4 servings:
2 1/4 cups dairy-free milk (I like to use one can of light organic coconut milk plus unsweetened almond milk)
1/4 cup Nuzest Clean Lean Rich Chocolate protein powder
2-3 Tbsp Further Food chocolate collagen (or Giddy Yo raw cacao powder for vegan)
1 Tbsp Plant Burst or Organika maca powder (optional)
3 drops Wild Orange essential oils, adjusted to taste
pinch of sea salt
Lakanto sugar-free monk fruit sweetener, pure stevia, or sweetener of choice, adjusted to taste
1/2 cup chia seeds
optional toppings: diced blood orange (omit for keto), diced Giddy Yo 76% cacao orange bar, Rawcology chocolate coconut chips, Healthy Crunch white choco'latte coconut chips, or toppings of choice
Directions:
Put the milk, protein powder, collagen or cacao, maca, and Wild Orange essential oils into a blender container and blend until smooth. Add sweetener and adjust essential oils to taste.
Add chia seeds and pulse-blend until just combined (or blend fully if you prefer a smooth consistency).
Pour into a bowl or single-serving mason jars and cover.
Allow to sit for 10 minutes, then whisk or shake well. Cover and refrigerate overnight.
In the morning, stir and add additional sweetener or almond milk as needed for desired taste and consistency. Serve cold or warm with your choice of toppings.
Chocolate Orange Chia Pudding can be stored in an airtight container in the fridge for 5 days.
