CHOCOLATE CHIP COOKIE DOUGH SURPRISE BALLS
/aka GRAIN-FREE SUGAR-FREE CHICK PEA, CASHEW & CACAO BITES!!
Ok, I know, some of you may be skeptical! But chickpeas actually work amazingly well as the base for healthy blondies and cookie dough!
These blissful little grain-free bites contain no processed sugar and are absolutely loaded with fibre, protein, antioxidants, and healthy fats. They are great for snacktime or breakfast on-the-go. And, really, what could be better than doctor-approved cookie dough for brekkie!?! Plus they are super easy to make in a blender or food processor and no baking is required!
Ingredients for approximately 10 balls:
1/2 cup canned chickpeas, rinsed, drained and peeled
1/2 cup cashew butter
1 scoop Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder
2 Tbsp white chia seeds (optional)*
1 Tbsp Plant Burst or Organika maca powder (optional)
1 tsp pure vanilla extract
1/4 tsp sea salt
Lakanto sugar-free monk fruit sweetener, stevia, or raw honey (nonvegan), adjusted to taste
2 Tbsp Giddy Yo raw cacao nibs or dark chocolate chips
*Notes: Chia seeds are optional and were not used in the batch pictured here. However, they add a great cookie dough-like granular texture in addition to healthy fats, fibre, protein, vitamins and minerals!
Instructions:
Place all ingredients except cacao nibs into food processor or blender container.
Pulse a few times, scape the sides and bottom of the container with a spatula and then blend until a uniform consistency is achieved. Fold in cacao nibs/chocolate chips.
Scrape sticky mixture onto a plate or parchment paper and roll into balls.
Enjoy as is, refrigerate until firm, or freeze for a quick snack later. These will keep in an airtight container for a week in the fridge or a couple months in the freezer.
