CHOCOLATE CHIP COOKIE DOUGH BITES (paleo, vegan)

Who doesn't love edible cookie dough?!?  And the good news here is that these blissful little grain-free bites contain no processed sugar and are absolutely loaded with fibre, protein, antioxidants, and healthy fats.  They are great for snack time, dessert, or breakfast on-the-go.  Yup — we're talking doctor-approved cookie dough for brekkie!  Better still, they are super easy to make in a blender or food processor and no baking is required!

Ingredients for 12 balls:

  • 3/4 cup cashew butter

  • 1/2 cup Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder

  • 1/3 cup coconut flour

  • 1/3 cup unsweetened desiccated coconut (optional, for texture)

  • 2 Tbsp white chia seeds

  • 1 Tbsp maca powder (optional)

  • 1 1/2 tsp pure vanilla extract

  • 1/4 tsp sea salt

  • 1 Tbsp MCT oil or melted coconut oil, if needed

  • Lakanto sugar-free monk fruit sweetener, stevia, or raw honey (non-vegan), adjusted to taste (optional)

  • 1/2 cup sugar-free dark chocolate chips or cacao nibs

Instructions:

  1. Place cashew butter, protein powder, coconut flour, desiccated coconut (if using), chia seeds, maca, vanilla, and sea salt into food processor or blender container.

  2. Pulse a few times, scape the sides and bottom of the container with a spatula, and then blend until a uniform consistency is achieved. If mixture is too thick to roll into balls, add 1 Tbsp MCT oil or melted coconut oil and blend again. Sweeten to taste.

  3. Fold in chocolate chips or cacao nibs.

  4. Scrape sticky mixture onto a plate or parchment paper and roll into balls. Refrigerate until firm.

Chocolate Chip Cookie Dough Bites can be stored in an airtight container in the fridge for a week or frozen for up to 2 months.
