CASHEW COCONUT QUINOA BLISS BALLS
/Yes, we are addicted to energy balls at my house! Thankfully, these little bites of bliss just so happen to be good for your body, brain & taste buds!
Cashew Coconut Quinoa balls are free of gluten and processed sugar but packed with easy-to-digest energy along with vitamins, minerals, antioxidants, fibre, protein and healthy fats. They are portable, super simple to make, and can be enjoyed any time of the day!
Ingredients for 12 balls:
1 cup roasted unsalted cashews
1/2 cup gluten-free puffed quinoa
1/2 cup unsweetened desiccated coconut
2 Tbsp gluten-free flaxseed meal
2 Tbsp chia seeds
1 Tbsp maca powder (optional)
12 pitted Medjool dates
1 Tbsp MCT oil or melted ococonut oil
1 tsp pure vanilla extract
optional toppings: unsweetened desiccated coconut (used here), finely chopped cashews, cacao powder, powdered almond butter, sugar-free confectioners’, or toppings of choice
Directions:
Put cashews, quinoa, coconut, flaxseed meal, chia seeds and maca into blender or food processor container. Blend until well-chopped.
Add the dates, MCT or coconut oil, and vanilla extract. Blend until a uniform paste is created, scraping the sides and bottom with a rubber spatula as needed.
Scrape mixture onto a plate or parchment paper. Roll into balls.
Once balls are formed, roll them in coconut or toppings of choice.
Cashew Coconut Quinoa Balls can be stored in an air tight container in the fridge for a week, or the freezer for up to 2 months.
