BUFFALO BRUSSELS
/These spiced-up little bites are seriously my kinda candy. Trust me, they are nothing like the overcooked mushy green balls you grew up eating! I also hated brussels sprouts as a kid, but now they are one of my favourite veggies.
Brussels sprouts are incredibly nutrient-dense since they are low in calories but packed with vitamins and minerals (especially C & K), fibre, and disease-fighting antioxidants. They are also one of the best plant sources of ALA omega-3 fatty acids. Some of the antioxidants in brussels sprouts, such as kaempferol, have been shown to reduce inflammation and help stabilize blood sugar, and may even reduce the risk of cancer.
Most of the time, I simply roast my brussels with some olive or avocado oil, salt & pepper. However, if I’m craving a little spice — or actually want my hubs and chicklets to eat them — this is how I roll!
Ingredients:
3 Tbsp Frank’s RedHot Original hot sauce or hot sauce of choice
3 Tbsp nutritional yeast
1 Tbsp avocado oil or extra-virgin olive oil
1 Tbsp arrowroot starch (optional)
2 tsp Lakanto Golden (or Classic) sugar-free monk fruit sweetener (optional)
1/2 tsp ground turmeric plus pinch of black pepper (optional)
1/2 tsp sea salt
1 pound of brussels sprout, washed, trimmed and cut in half
Directions for Oven:
Preheat oven to 400ºF and line one or two baking sheets with parchment.
Put hot sauce, nutritional yeast, avocado oil, arrowroot starch, sweetener, turmeric, pepper, and salt into a large bowl and whisk until well combined.
Add brussels sprouts and toss to coat.
Spread brussels sprouts evenly on the prepared baking sheets (don't crowd or they won’t get as crispy!) and roast for approximately 30 to 35 minutes, turning halfway, or until desired consistency achieved.
Directions for Air Fryer:
Preheat air fryer to 400ºF.
Put hot sauce, nutritional yeast, avocado oil, arrowroot starch, sweetener, turmeric, pepper, and salt into a large bowl and whisk until well combined.
Add brussels sprouts and toss to coat.
Spray air fryer basket with avocado oil and place brussels in basket in a single layer (multiple batches may be required). Air fry for 10 minutes (or until desired level of doneness), shaking halfway through.
Buffalo Brussels can be stored in an airtight container in the fridge for 5 days. Reheat in the oven before serving — or enjoy them cold on salad like me!
