BEAUTIFUL BLUE SMOOTHIE
/This simple, nutritious and delicious blueberry smoothie always hits the spot. It looks and tastes beautiful and is beautiful for our bodies too!
Blueberries are native to North America and are loaded with vitamins, minerals, fibre and powerful disease and inflammation-fighting phytochemicals. In fact, blueberries are one of the most nutrient-dense, antioxidant-rich foods on the planet! Studies suggest that blueberry consumption may help combat the signs of aging; promote heart, skin and gut health; reduce the risk of cancer; and boost brain function.
The base recipe makes a light and refreshing berry shake. For a more substantial snack or ‘real meal deal’, I have suggested some add-ins that provide extra nutrients, fibre, healthy fats, and protein.
For 2 servings, blend together:
1 1/2 cups unsweetened almond or nut-free milk, adjusted to desired consistency
1 to 1 1/2 cups frozen blueberries
1 frozen banana or 1/2 to 1 cup steamed-then-frozen cauliflower for a low-carb option
1 tsp pure vanilla extract (optional)
Lakanto sugar-free monk fruit sweetener, raw honey (non-vegan), pure stevia, maple syrup, or sweetener of choice, adjusted to taste (optional)
Optional add-ins:
2 handfuls fresh baby spinach (for a blue-green smoothie)
1 to 2 Tbsp cashew or almond butter
1 Tbsp chia seeds
2 Tbsp Nuzest Clean Lean Just Natural (unsweetened) or Smooth Vanilla protein powder or 2 Tbsp Further Food collagen (non-vegan) or 1 Tbsp of each
1/2 cup plain Greek yogurt
