BLUE BRILLIANCE CHIA PUDDING

Chia seeds, blueberries, and nut/seed butter make for a truly brilliant breakfast bowl!

I’ve provided two different versions of this make-ahead meal. One is super simple using just berries and natural peanut butter (or sunflower seed butter or tahini for nut-free). The other is a boosted paleo almond version. Both are nutritious, delicious, and easy to make!

Blueberries are delicious little nutritional powerhouses.  They contain among the highest antioxidant capacities of all fruits and vegetables.

Chia seeds have a mild nutty taste and are extremely nutrient-dense.  They are rich in minerals, antioxidants, protein, healthy fats, and fibre.  In fact, a 2 Tbsp serving contains 4 grams of protein and 12 grams of carbohydrate, of which 11 grams are actually fibre!

Basic Blue Brilliance Chia Pudding Recipe

Ingredients for 4 servings:

  • 2 cups unsweetened almond or nut-free milk (I like to use my Almond Cow to make homemade plant-based milk)

  • 1 cup frozen blueberries

  • 1/4 cup natural peanut butter (or sunflower seed butter or tahini for nut-free and paleo)

  • 1 tsp pure vanilla extract (optional)

  • Lakanto sugar-free monk fruit sweetener, pure stevia, raw honey (nonvegan), or sweetener of choice, adjusted to taste (optional)

  • 1/4 cup white chia seeds

  • optional toppings: peanuts, nuts or seeds, fresh or frozen berries, granola, chocolate chips or cacao nibs, hemp hearts, bee pollen, nut butter, or toppings of choice

Directions:

  1. Put almond milk, blueberries, peanut butter, and vanilla into a blender container and blend well. Sweeten to taste.

  2. Add chia seeds and pulse-blend until just combined.

  3. Pour into a bowl or single-serving mason jars and allow to sit for 10 minutes. Whisk or cover and shake and then refrigerate overnight or for a minimum of 4 hours until a pudding-like consistency achieved.

Blue Brilliance Chia Pudding can be stored in an airtight container in the fridge for up to 5 days. Serve with your choice of toppings.

Boosted Paleo Almond Version

For step 1, omit peanut butter and vanilla. Add 1/4 cup almond butter, 1 tsp pure almond extract, and 2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder. Do steps 2 and 3 as above.
