BLUEBERRY GINGER OVERNIGHT OATS
/There are few breakfasts as simple and satisfying as overnight protein oats. You simply mix the ingredients together in a matter of minutes the night before, and they soak while you sleep. In the morning, they're ready whenever you are!
This blueberry ginger version is a personal favourite. It tastes great and is absolutely packed with all the goods — vitamins and minerals, antioxidants, fibre, healthy fats, and protein. For a fun and flavourful spin, I sometimes add lemongrass essential oils or lemon zest, too. What a great way to start the day!
Bring on the Blue
Blueberries are bursting with flavour and nutrition. They are packed with amazing phytonutrients, vitamins, minerals, and fibre.
Blueberries get their deep blue hue from anthocyanins, which are powerful antioxidants. In fact, blueberries contain among the highest antioxidant capacities of all the commonly consumed fruits and vegetables. These natural disease-fighting agents are believed to help in the prevention of cancer, diabetes, heart disease and even cognitive impairment.
Ginger Giant
Ginger has a fresh, fragrant and slightly peppery taste. It is well-recognized as having anti-inflammatory, anti-nausea, analgesic and pro-digestive benefits. Research also suggests that consumption of ginger can boost immunity and reduce the risk of obesity, diabetes, stroke and heart disease.
Blueberry Ginger Overnight Oats Recipe
Ingredients for 3 to 4 servings:
1 cup gluten-free old-fashioned rolled oats
2 Tbsp chia seeds
2 Tbsp Further Food Collagen Peptides (nonvegan) or Nuzest Clean Lean Smooth Vanilla or Just Natural Protein Powder or 1 Tbsp of each
1 cup unsweetened almond or nut-free milk (I like to make homemade plant-based milk with my Almond Cow)
1 cup canned organic full-fat coconut milk
1/2 to 1 Tbsp grated fresh ginger, adjusted to taste
1 cup frozen unsweetened blueberries
Lakanto Sugar-free Monkfruit sweetener, pure stevia, or sweetener or choice, adjusted to taste
optional 1 to 2 drops lemongrass essential oils or lemon zest, adjusted to taste
optional toppings: fresh organic blueberries, golden berries, pomegranate arils, granola (grain-free coconut cashew granola used here), or toppings of choice
Directions:
Put oats, chia seeds, flax, collagen or protein powder, almond milk, coconut milk, 1/2 Tbsp ginger, and blueberries in a bowl or single-serving mason jar(s) and stir well to combine. Adjust ginger and add sweetener plus essential oils or lemon zest (if using) to taste.
Cover and refrigerate overnight, or for a minimum of 6 hours.
In the morning, stir and serve chilled or heat if desired. Add toppings and enjoy!
