CHIA SEED JAM
/This jam tastes amazing, contains no added sugar, is loaded with antioxidants, vitamins & minerals, fibre, protein and healthy fats, plus it's incredibly easy to make. Now how good is that?!?
Ingredients for approximately 1 1/2 cups jam:
2 cups fresh and/or frozen organic raspberries, blueberries, strawberries, or mixed berries
2 Tbsp water
1 to 2 Tbsp Further Food Collagen Peptides or Nuzest Clean Lean Smooth Vanilla or Natural vegan protein powder (optional)
1 tsp pure vanilla or almond extract, or a couple drops orange essential oils (optional)
Lakanto or ZenSweet sugar-free monk fruit sweetener, raw honey (non-vegan), maple syrup, or sweetener of choice, adjusted to taste (optional)
2 Tbsp chia seeds
Directions:
Put berries and water in a pot over medium heat and cook until they start to break down and become syrupy, approximately 8 minutes.
Using a wooden spoon or potato masher, mash the fruit to desired consistency.
Remove from heat and stir in collagen and/or protein, extract, or essential oils if using. Sweeten to taste.
Add chia seeds and stir until well combined. Let stand 10 minutes or until thickened.
Enjoy now or transfer to a jar and cover and refrigerate. Jam will thicken further as it chills.
Chia Seed Jam can be stored in an airtight container in the fridge for 2 weeks or frozen for up to 2 months.
