AZURE ABUNDANCE (Blue Majik Chia Protein Pudding)

I absolutely love this Blue Majik chia protein pudding.  It looks beautiful (I mean, that azure blue is kinda surreal, no?!?) and is wonderfully creamy and satisfying. It contains no refined sugar, dairy, or grains yet provides an ABUNDANCE of fibre, protein, healthy fats, and anti-inflammatory antioxidant goodness. Better still, it’s super easy to make and can be served for breakfast, lunch, snack, or even dessert. Doesn't get much better than that!

Why Chia?

Chia seeds have a mild nutty taste and are rich in fibre, minerals, plant protein, antioxidants, and healthy fats.  In fact, a 2 Tbsp serving of chia seeds contains approximately 4 grams of protein and 12 grams of carbohydrate, of which 11 grams are actually fibre!

Blue Majik is an extract from the blue-green algae, Arthrospira platensis (spirulina).  It's not cheap, but a little goes a long way and this stuff is insanely nutrient-dense.  It is packed with vitamins, minerals and protein, and its bright blue hue comes from C-phycocyanin, a biliprotein with antioxidant, anti-inflammatory, and neuroprotective effects.  More research is needed, but it has been suggested that blue spirulina can increase energy and metabolism, boost the immune system, reduce cholesterol and blood pressure, and even lower the risk of stroke and certain cancers.  

Azure Abundance Recipe

Ingredients for 3 servings:

  • 1 cup coconut milk (I use organic full-fat coconut milk)

  • 1 cup unsweetened almond or nut-free milk (I like to use my Almond Cow to make homemade plant-based milk)

  • 2 scoops Further Food collagen or one scoop Nuzest Clean Lean vanilla or natural protein (optional)

  • 2 scoops E3Live Blue Majik blue spirulina powder

  • 1 tsp pure vanilla extract (optional)

  • Lakanto monkfruit sweetener, raw honey (nonvegan), pure maple syrup, or stevia, adjusted to taste

  • 6 Tbsp white chia seeds

  • optional toppings or parfait layers: fresh fruit, bee pollen, unsweetened desiccated coconut, granola, coconut yogurt or “whipped cream” (recipe below), or toppings of choice

Directions:

  1. Put coconut milk, almond milk, collagen/protein, Blue Majik, and vanilla into a bowl or blender container and whisk or blend on high until well-mixed. Sweeten to taste.

  2. Add chia seeds and whisk or blend on low until just combined.

  3. Pour into bowl or single-serving mason jars and cover or seal tightly.

  4. Let sit for 10 minutes, then shake or whisk well and put in fridge overnight or for a minimum of several hours to set.

Serve with toppings as desired or layer into chia parfaits with Vanilla Coconut Whipped Cream (below). Azure Abundance can be stored in an airtight container in the fridge for up to 5 days.

Vanilla Coconut Whipped Cream

This recipe requires coconut cream.  If coconut cream is not available, you can use the solidified cream from the top of refrigerated full-fat coconut milk.  The liquid can be reserved and used later (perhaps in a tasty smoothie!).  Two cans may be required.

Ingredients:

  • 1 cup well-chilled coconut cream

  • 1 tsp pure vanilla extract (optional)

  • Lakanto monkfruit liquid sweetener, pure stevia, or sweetener of choice, adjusted to taste (optional)

Directions:

Put the cold coconut cream, vanilla, and sweetener into a bowl.  Beat until smooth.  Use immediately or refrigerate until ready to use.
