Banana and coconut are a match made in heaven!

Bonus is, this nutritious-and-delicious chia pudding is super easy to make, free of added sugar (yes, there is even a low-carb option because you don’t need much banana to get the banana flavour!), and packed with fibre, healthy fats, and protein, too! 

If you follow me on Instagram, or have tried some of my other recipes, you know that I like to give my chia pudding a protein boost. I have provided two options here. One is to use vegan & paleo-friendly protein powder, and the other is to use cottage cheese. Don’t let the idea of cottage cheese scare you off — you can’t taste it! It gets blended with the coconut milk so you can’t even tell that it’s there. Yet it adds a wonderful creaminess along with loads of protein and vitamins & minerals including B vitamins, calcium, phosphorus, and selenium.

Ingredients for 4 servings:

  • 1 can (400 mL or 14 oz or 1 2/3 cups) coconut milk, light (here) or full-fat

  • 1/2 cup unsweetened almond milk or milk of choice (OMIT if using cottage cheese)

  • 1 to 2 ripe medium bananas (see note below*)

  • 1/4 cup Nuzest Clean Lean Smooth Vanilla protein powder OR 2 cups plain cottage cheese (I prefer to use 4%)

  • 1 tsp pure vanilla extract

  • 1/2 tsp ground cinnamon

  • 1/4 tsp salt

  • Lakanto or ZenSweet sugar-free monk fruit sweetener or sweetener of choice, adjusted to taste (optional)

  • 1/2 cup white chia seeds

  • optional toppings: banana (non-keto), berries, granola and/or crunchy cereal, diced chocolate or sugar-free chocolate chips, unsweetened shredded coconut, Eaton Hemp hemp hearts, cinnamon “sugar” (cinnamon mixed with Lakanto or ZenSweet granular sugar-free monk fruit), nut butter, or toppings of choice

*Note: Use 1 banana for a lower-carb option (1/4 banana per serving, or approximately 6.5 grams carbohydrate) and 2 bananas for a more pronounced banana flavour.

Directions:

  1. Put coconut milk, almond milk (only if using protein powder), banana, protein powder OR cottage cheese, vanilla, cinnamon, and salt into a blender container and blend until smooth. Sweeten to taste.

  2. Add chia seeds and pulse-blend until just combined (or blend fully if you prefer a smooth pudding consistency).

  3. Pour into a bowl or single-serving mason jars and cover.

  4. Allow to sit for 10 minutes, then whisk or shake well.  Cover and refrigerate overnight.

In the morning, stir and add additional sweetener or milk as needed for desired taste and consistency.  Serve cold or warm with your choice of toppings.
