PINK PERFECTION SMOOTHIE
/My family loves this refreshing pink drink. Watermelon and strawberries get a beautiful splash of citrus from the lime and baobab powder (optional). Chia seeds provide a mild nutty taste along with a bonus dose of fibre, minerals, protein, antioxidants, and essential omega 3 fatty acids.
Baobab powder (optional) has a wonderful tangy, citrusy flavour. It is unusually rich in fibre, vitamin C, and antioxidants. Baobab is also packed with minerals including potassium, magnesium and calcium, making it a great addition to any post-workout snack.
This recipe can be made with fresh or frozen fruit. Fresh fruit obviously results in a thinner smoothie and no additional liquid is required. If you use frozen, add coconut water as needed for desired consistency.
For 2 servings, blend together until smooth:
2 cups diced seedless red watermelon (fresh or frozen)
1 cup strawberries (fresh or frozen)
1/2 cup unsweetened coconut water (optional, see note above), adjusted to desired consistency
2 Tbsp chia seeds
1 to 2 Tbsp baobab powder (optional), adjusted to taste
juice from 1/2 to 1 lime, adjusted to taste
Lakanto sugar-free monk fruit sweetener, pure stevia, maple syrup, or raw honey (non-vegan), adjusted to taste
optional toppings: strawberries, bee pollen, granola, or toppings of choice
Note: If serving as a more substantial snack or meal, I recommend adding a protein boost. Good options here include Nuzest vegan protein and/or Furtherfood collagen or Greek yogurt (non-vegan).
