ORANGE CREAMSICLE OVERNIGHT OATS
/I absolutely love overnight protein oats and this creamy orange and vanilla combo is SUPER yummy. A total hit with the 3 chicklets and my sometimes picky hubs! Of course, in keeping with my morning meal mantra, these oats also happen to be packed with micronutrients, fibre, healthy fats, protein, and adaptogens, too!
Ode to the Orange
Oranges are extremely nutrient dense. For less than 100 calories per large orange, you get loads of vitamins & minerals (including 163% of the daily value for vitamin C!) along with disease-fighting, anti-inflammatory bioflavonoid antioxidants and over 4 grams of fibre.
Orange Creamsicle Overnight Oats Recipe
Ingredients for 3 to 4 servings:
1 cup gluten-free old-fashioned rolled oats
1 cup unsweetened almond or nut-free milk (I like to use my Almond Cow to make homemade plant-based milk)
1 cup canned organic full-fat coconut milk
1/4 cup Nuzest Clean Lean Smooth Vanilla protein powder
2 Tbsp white chia seeds
1 Tbsp gluten-free flaxseed meal (optional, used above only)
1 Tbsp Plant Burst or Organika maca powder (optional)
1 tsp pure vanilla extract
1 cup diced fresh oranges
Lakanto sugar-free monk fruit sweetener or sweetener of choice, adjusted to taste
optional toppings: diced oranges or orange zest, toasted coconut chips, granola, diced Giddy Yo dark chocolate bar, poppy seeds, bee pollen, peanut or nut butter, or toppings of choice
Directions:
Put all of the ingredients except toppings in a bowl or single-serving mason jar(s) and stir well to combine.
Cover and refrigerate overnight or for a minimum of 6 hours. In the morning, stir, add toppings, and enjoy!
Orange Creamsicle Overnight Oats can be stored in an airtight container in the fridge for up to 5 days.
