In my house, hubs and the chicklets love their Sloppy Joes on toasted brioche buns with cheese and guacamole (pictured above).  I like to play around with bunless options and load mine on salad, lettuce cups, konjac noodles, spiralized zucchini, baked sweet potato, or roasted vegetables.

This recipe works well with ground turkey, chicken, beef, or a combination. I haven’t tried it with lentils yet, but I’m sure it would be delicious!

I am a big fan of leftovers and often make a double batch for the freezer, but you could certainly cut the recipe in half.

Ingredients for approximately 8 servings:

  • 2 Tbsp extra-virgin olive oil

  • 1 cup very finely diced onion

  • 3 cloves garlic, minced

  • 1 red bell pepper, finely diced

  • 2 Tbsp Lakanto Golden sugar-free monk fruit sweetener (or brown sugar)

  • 2 tsp ground cumin

  • 1 tsp ground coriander

  • 1 tsp chili powder

  • 2 lbs (900 grams) ground turkey or chicken OR 1 pound/450 grams each ground beef and turkey

  • 1 1/2 cups bottled mild salsa

  • 1/2 cup ketchup (I like to use Good Food For Good keto-friendly ketchup)

  • 1 Tbsp or more Worcestershire sauce, adjusted to taste

  • 1 tsp Dijon mustard

  • salt & pepper, adjusted to taste

Directions:

  1. Heat oil in a large skillet over medium-high heat.

  2. Add onion, garlic and red pepper and sauté for approximately 5 minutes or until the onion is soft and translucent.

  3. Add sweetener, cumin, coriander, chili, and ground meat.  Cook for approximately 5 min or until the meat is cooked through, stirring frequently to break it up.

  4. Mix in salsa, ketchup, Worcestershire sauce, and mustard.  Reduce heat to low and simmer for another 10 to 15 minutes, or until the sauce reaches desired thickness. Season with salt and pepper to taste.

  5. Serve on toasted buns, lettuce cups, konjac noodles, or even salad or roasted veggies with cheese and sliced avocado or guacamole.

Leftovers can be stored in an airtight container in the fridge for 3 to 4 days or frozen for up to 2 months and reheated before serving.
