SPICED MILLET BREAKFAST PORRIDGE (Instant Pot)

Millet, like buckwheat and quinoa, is a “pseudograin” — a gluten-free seed with grain-like characteristics — that is safe for individuals with Celiac disease and gluten sensitivity. It is rich vitamins and minerals including magnesium, as well as fibre (including prebiotics) and high quality, easily digested plant-based protein.
Ingredients for 2 large or 4 small servings:
1 tsp avocado oil
1/2 cup uncooked millet, rinsed and drained
1 1/2 cups almond or nut-free milk
1/2 cup canned coconut milk
2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder
3 Tbsp Lakanto Golden sugar-free monk fruit sweetener (optional, or substitute date or coconut sugar)
1 tsp pure vanilla extract
1 tsp cinnamon
1/2 tsp ground cardamom
1/4 tsp sea salt
pinch nutmeg
1/2 to 1 cup raisins or chopped dried fruit (optional)
optional toppings: berries or other fruit, toasted pistachios, toasted coconut chips or desiccated coconut, granola, raisins or chopped dates or dried cranberries, diced Giddy Yo 72% cacao Moka Cardamom bar or protein bar, bee pollen, hemp seeds, drizzle of raw honey (nonvegan) or pure maple syrup, or toppings of choice
Directions:
With Instant Pot on sauté setting, add oil and millet and sauté for 4 to 6 minutes until millet is golden brown and has a nutty aroma.
Turn Instant Pot off and add almond milk, coconut milk, protein powder, sweetener, vanilla, cinnamon, cardamom, salt, and nutmeg. Close and lock lid and pressure cook on high for 15 minutes, followed by a natural pressure release.
Once pressure is released, open lid carefully. Stir in raisins or diced dried fruit as desired and serve warm with your choice of toppings.
Spiced Millet Porridge can be stored in an airtight container in the fridge for up to 4 days. To reheat, put in a pot over medium heat and stir in almond or nut-free milk as needed for desired consistency.
