SPICED CHOCOLATE OVERNIGHT OATS

There are a few surprise ingredients in these oats.  All are OPTIONAL but definitely worth a try if you’re game!

The first surprise ingredient is fresh ginger. Ginger adds a wonderful warm, peppery, sweet-spicy flavour and combines beautifully with the chocolate. The next unexpected addition is sugar-free instant chocolate pudding mix. As you can imagine, this makes the oats extra creamy! For a (sugar-free) sweet chocolate taste, I added my favourite Lakanto Drinking Chocolate mix. I love this addition, but raw cacao powder can be used if preferred. Finally, I threw in some cauliflower rice. Trust me on this — you don’t taste it, but it’s a great way to get a morning veggie boost!

Ingredients for 2 servings:

  • 2/3 cup old-fashioned rolled oats (gluten-free if needed)

  • 2 Tbsp Nuzest Clean Lean Rich Chocolate protein powder

  • 2 Tbsp Further Food chocolate collagen (omit for vegan)

  • 2 Tbsp sugar-free instant chocolate pudding mix (optional, I used Simply Delish brand with natural sweeteners)

  • 2 Tbsp Lakanto sugar-free Drinking Chocolate mix (optional; omit or add cacao powder to taste if prefer more chocolatey)

  • 2 tsp chia seeds

  • 1/2 tsp ground cinnamon plus a pinch each of salt and ground cardamom

  • 1 cup unsweetened dairy-free milk (I like to use Nutpods dairy-free chocolate creamer)

  • 2/3 cup frozen cauliflower rice (optional; steamed-then-frozen if needed for better digestion)

  • 2 Tbsp Lakanto Maple sugar-free syrup or pure maple syrup, or sweetener of choice, adjusted to taste

  • 1/2 tsp or more grated peeled fresh ginger, adjusted to taste

  • 1 tsp pure vanilla extract (optional)

  • optional toppings: fruit, Lakanto sugar-free chocolate almonds, granola, diced Love+Chew Superfood Cookie pieces, nut butter, or toppings of choice

Directions:

  1. Put oats, protein powder, collagen powder, pudding mix, drinking chocolate or cacao powder, chia seeds, cinnamon, cardamom, and salt in a bowl or divide between single-serving mason jars.  Stir well to combine.

  2. Add creamer or milk, cauliflower rice, sweetener, ginger, and vanilla and mix well.  Adjust sweetener, spices, and ginger to taste.

  3. Cover and refrigerate overnight, or for a minimum of 6 hours.

Spiced Chocolate Overnight Oats can be stored in an airtight container in the fridge for 4 to 5 days.  Before serving, stir and add additional almond or nut-free milk as needed for desired consistency.  Enjoy cold or heated with your choice of toppings.
