S'MORES OVERNIGHT OATS
/I absolutely LOVE these overnight oats. I mean, S’MORES, folks!! Chocolate, marshmallows, and graham crackers are one of life’s best trios.
Good news is, my nutritious-and-delicious recipe is easy-to-make and packed with micronutrients (vitamins, minerals, antioxidants), fibre, healthy fats, and protein.
The only added sugar here is in the few marshmallows & cracker pieces on top, so you can keep that to a minimum, too!
Ingredients per serving:
1/3 cup old-fashioned rolled oats (gluten-free if needed)
1 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder
1 Tbsp Further Food vanilla collagen (omit for vegan)
1/2 Tbsp chia seeds
2/3 cup Nut Pods Toasted Marshmallow creamer (see note below*)
1/2 tsp pure vanilla extract
Lakanto sugar-free monk fruit sweetener or sweetener of choice, adjusted to taste
optional toppings: mini marshmallows (I used vegan ones), diced dark chocolate, crushed graham crackers, chia jam, golden berries, pomegranate arils, pumpkin seeds, Fatso Salted Caramel peanut butter, or toppings of choice
*Note: I love using dairy-free, sugar-free Nutpods Toasted Marshmallow creamer to make these oats extra creamy and delicious. I buy my Nutpods from Natura Market online or Summerhill Market here in Toronto. If you don’t have access to Nutpods, you can use a combination of canned organic coconut milk and unsweetened almond milk or your milk of choice.
Directions:
Put oats, Nuzest protein powder, Further Food collagen, and chia seeds in a bowl or mason jar and stir to combine.
Add creamer and vanilla and mix well. Sweeten to taste.
Cover and refrigerate overnight or for a minimum of 6 hours.
Serve chilled or heated with your choice of toppings. S’Mores Overnight Oats can be stored in an airtight container in the fridge for 5 days.
