PIÑA COLADA OVERNIGHT PROATS
/I love these pineapple & coconut overnight oats. Not only do they taste like the tropics, but they’re loaded with vitamins and minerals, antioxidants, fibre, healthy fats, protein, and pre and probiotics, too!
For this recipe, I often use kefir. Kefir provides a wonderful tanginess along with gut-healthy probiotics. However, if you’re not a fan of kefir, nondairy milk also works.
Pineapple Passion
Pineapples are native to South America but were first discovered by Europeans on the Caribbean island of Guadalupe in the 1400s. Pineapple is rich in vitamins (especially vitamin C), minerals and antioxidants, as well as a complex enzyme called bromelain. This protein-digesting compound is believed to have numerous health benefits, including anti-inflammatory, anti-cancer, and pro-digestive effects
Crazy for Kefir (optional)
Kefir is a fermented drink that can be made from milk (dairy or nondairy, including soy, rice and coconut) or water. This unique probiotic powerhouse has a yogurt-like taste and lots of immune-boosting and disease-fighting benefits. It contains bioactive compounds that can improve gut and skin health, and may even help to reduce the risk of cancer and allergy symptoms. One compound found only in kefir, known as kefiran, has been found to fight against candida, a common yeast infection. Piña Colada Overnight Proats Recipe
Ingredients for 2 servings:
2/3 cup gluten-free old-fashioned rolled oats
2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder or 2 Tbsp Further Food Vanilla Collagen Peptides (nonvegan)
2 Tbsp white chia seeds
2 Tbsp unsweetened desiccated coconut
1 cup frozen pineapple chunks
3/4 cup kefir (dairy or coconut) or nondairy milk of choice (for less tangy oats)
1/3 cup canned organic full-fat coconut milk
1/2 tsp pure vanilla extract
Lakanto sugar-free monk fruit sweetener, stevia, honey (nonvegan), or sweetener of choice, adjusted to taste
optional toppings: fresh or frozen pineapple chunks, berries, homemade granola, unsweetened desiccated coconut or coconut chips (Healthy Crunch Sweet Beet Coconut Chips above), bee pollen, Giddy Yo raw cacao nibs, or toppings of choice
Directions:
In a medium bowl, mix together oats, protein powder or collagen, chia seeds, and coconut.
Put pineapple, kefir or nondairy milk, coconut milk, and vanilla extract into blender container and blend well. Add sweetener to taste.
Pour pineapple "smoothie" over the oat mixture and stir to combine.
Cover and refrigerate overnight, or for a minimum of 6 hours. In the morning, stir and serve with your choice of toppings.
Piña Colada Overnight Proats can be stored in an airtight container in the fridge for 4 to 5 days.
