PEANUT BUTTER PROTEIN "MOUSSE" (or nut/seed butter)
/Peanut Butter Protein “Mousse” topped with berries, roasted peanuts, coconut chips (sweet beet flavour here), grain-free keto-friendly granola, sugar-free chocolate chips, and a drizzle of Fatso Salted Caramel peanut butter.
Versions of this yogurt-based “mousse” appear weekly at my house. It’s easy, nutritious, and delicious, and great for breakfast, snack time or even dessert!
You can make my easy recipe with any drippy peanut, nut, or seed butter. For school lunches, I typically use sunflower seed butter. I have also made it with Lakanto sugar-free peanut butter powder.
Ingredients for 2 servings:
Peanut Butter Protein “Mousse” made with Lakanto sugar-free peanut butter powder.
1 cup thick plain Greek or non-dairy yogurt
3 Tbsp “drippy” natural peanut or nut/seed butter or Lakanto sugar-free peanut butter powder
1 to 2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder (optional)
pinch of salt
Lakanto sugar-free monk fruit sweetener, or sweetener of choice, adjusted to taste
optional toppings: berries, nuts or seeds, coconut chips, granola, cereal, sugar-free chocolate chips, peanut or nut butter, or toppings of choice
Directions:
Put yogurt, peanut or nut butter, protein powder, and salt into a medium bowl and “whip” together, just until smooth. Sweeten to taste.
Serve with your choice of toppings and enjoy!
Peanut Butter Protein “Mousse” can be stored in an airtight container in the fridge for 3 to 4 days. ⠀
