PEANUT BUTTER & BANANA OVERNIGHT OATS
/Peanut butter and banana are a match made in heaven. Bonus is, these nutritious-and-delicious overnight oats are easy to make and packed with all the fibre, healthy fats, and protein needed to start your day off right!
Peanut Butter & Banana Overnight Oats can be enjoyed chilled and on-the-go or warmed-up for a cozy and nourishing breakfast.
Ingredients for one serving:
1/3 cup gluten-free old-fashioned rolled oats
2 Tbsp sugar-free peanut butter powder
1 Tbsp vanilla protein powder
1 tsp chia seeds
1/2 tsp maca powder (optional)
pinch salt
2/3 cup canned light coconut milk of choice (or milk of choice)
1/2 ripe banana, mashed, or more to taste
1/4 tsp pure vanilla extract
optional sugar-free monk fruit sweetener, stevia, or sweetener of choice, adjusted to taste
optional toppings: banana slices, berries, peanuts, peanut butter, cacao nibs and/or diced chocolate or chocolate chips, granola or other crunchy cereal, Lakanto Suntella sugar-free chocolate sunflower spread, or toppings of choice
Directions:
Put oats, peanut butter powder, protein powder, chia seeds, maca, and salt in a bowl or single-serving mason jar and stir well to combine.
Add milk, mashed banana, and vanilla and mix until well-incorporated. Sweeten to taste.
Cover and refrigerate overnight or for a minimum of 6 hours.
In the morning, stir and add additional sweetener, peanut butter powder, banana and/or milk for desired taste and consistency. Serve with your choice of toppings.
Peanut Butter & Banana Overnight Oats can be stored in an airtight container in the fridge for up to 4 days.
