LEMON CREAM PIE PUDDING
/This 3-ingredient make-ahead chia pudding is thick and creamy and super satisfying, with a wonderful burst of freshness from the lemon. Bonus is, it comes together in just a couple minutes and is packed with probiotics, fibre, healthy fats, and protein to start your day off right!
Ingredients for 4 servings:
2 cups unsweetened non-dairy milk (I like to use a can of light coconut milk plus some almond milk)
2 cups lemon Greek yogurt (I like Siggis)
1/2 cup chia seeds
Optional add-ins (all used here)
1 teaspoon pure vanilla extract
2 to 3 tsp lemon zest, adjusted to taste
1/4 cup Lakanto Maple sugar-free monk fruit or sweetener of choice, adjusted to taste
pinch sea salt
Directions:
In a medium bowl, whisk together milk, yogurt, chia seeds, and optional add-ins.
Allow to sit for 10 minutes, then whisk again. Cover and refrigerate overnight.
In the morning, stir and add additional sweetener or milk as needed for desired taste and consistency. Serve cold with your choice of toppings.
