BIRTHDAY CAKE CAULI PROATS
/We have been all about the sprinkles at my house lately. So it seemed like the perfect time to turn my Funfetti Protein Balls into overnight cauliflower protein oats!
Yes, folks, I’ve combined my “base” overnight protein oats recipe with the ingredients & flavourings found in my protein balls for a fun, easy, nutritious, and delicious breakfast-of-champions!
Note that I’ve added cauliflower rice here. The cauliflower is optional, but if you haven’t tried it in oats, it’s worth a shot. You get a great chew and lots of nutrients and — trust me! — your brekkie still tastes like cake, NOT cauliflower!
Ingredients for one serving:
1/3 cup gluten-free old-fashioned rolled oats
1 to 2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder or Further Food Vanilla Collagen Peptides or 1 Tbsp of each
1/2 Tbsp chia seeds
pinch of sea salt
2/3 cup unsweetened cashew or almond milk
1/3 cup cauliflower rice (optional, see note below*)
1 Tbsp cashew butter
1/4 tsp pure almond extract, adjusted to taste
Lakanto sugar-free monk fruit sweetener, Swerve confectioners’, or sweetener of choice, adjusted to taste
optional toppings: sprinkles, white chocolate chips, unsweetened shredded coconut and/or coconut chips, granola, nut butter, chia jam, or toppings of choice
Note: I add frozen cauliflower rice straight from the bag for convenience. However, pre-steamed cauliflower rice can be used if needed for better digestion.
Directions:
Put oats, protein powder, chia seeds, and salt in a bowl or single-serving mason jar and stir to combine.
Add milk, cauliflower rice, cashew butter, and almond extract, and mix until well incorporated. Sweeten to taste.
Cover and refrigerate overnight or for a minimum of 6 hours. Stir and add additional milk as needed for desired consistency.
Birthday Cake Cauli Proats can be stored in an airtight container in the fridge for up to 5 days. Serve chilled or warm with your choice of toppings.
