EGGNOG OVERNIGHT PROTEIN OATS (dairy-free)
/Looking for a way to use up that extra holiday eggnog? Then these nutritious-and-delicious overnight protein oats are a must!
Here I used some vegan almond milk nog, but feel free to use whatever eggnog suits your fancy, bourbon or no bourbon!
Ingredients for 2 servings:
2/3 cup gluten-free old-fashioned rolled oats
2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder
2 Tbsp Further Food Vanilla Collagen (omit for vegan)
2 Tbsp Eaton Hemp hemp seeds
2 Tbsp chia seeds
1 1/3 cups dairy-free eggnog (almond nog or Nutpods dairy-free creamer) or eggnog of choice
2 Tbsp Giddy Yo cacao powder (optional)
2 tsp maca powder (optional)
1/4 tsp sea salt
pinch or two of nutmeg (optional, depending on eggnog used)
Lakanto or ZenSweet sugar-free monk fruit sweetener, adjusted to taste (optional)
optional toppings: berries, granola, nut butter, diced dark chocolate, pomegranate arils, dried cranberries, pistachios, bee pollen, or toppings of choice
Directions:
Put oats, protein powder, collagen, hemp seeds, chia seeds, almond nog or eggnog, cacao powder (if using), maca, sea salt, and nutmeg in a bowl or single-serving mason jars and stir well to combine. Sweeten to taste.
Cover and refrigerate overnight, or for a minimum of 6 hours.
Eggnog Overnight Protein Oats can be stored in an airtight container in the fridge for 4 to 5 days. Before serving, stir and add additional almond nog or eggnog as needed for desired consistency. Enjoy warm or cold with your choice of toppings.
