My family absolutely loves this grain-free chocolate chip cake.  Which is music to my ears since it’s super simple to make, free of added sugar, and packed with healthy fats, protein, and (optional) adaptogens, too.

I like to use cashew butter or a combination of cashew and peanut butter for this cake. Fatso Salted Caramel peanut butter is also delicious. For a nut-free option, it can be made with tahini.

My suggestion?  Give it a go. And eat it for brekkie, too — #doctorsorders!

Ingredients:

  • 4 pasture-raised eggs

  • 1 cup drippy cashew butter or peanut butter (or tahini for nut-free*)

  • 1/4 cup plain Greek or non-dairy yogurt

  • 1/4 cup Further Food collagen peptides (I like to use the vanilla collagen)

  • 1/4 to 1/2 cup Lakanto Powdered sugar-fee monk fruit sweetener or Swerve or equivalent (non-keto can use coconut sugar)

  • 1 Tbsp Plant Burst or Organika maca powder (optional)

  • 1 tsp baking soda

  • 1 tsp pure vanilla extract

  • 1 cup sugar-free chocolate chips (such as Lily’s Sweets)

  • optional toppings: melted coconut butter mixed with Lakanto sweetener to taste (or cashew butter and cacao powder below), chocolate chips, or toppings of choice

*Notes: For a sweeter cake, especially if you use tahini (to offset bitterness), increase sweetener to 1/3 or 1/2 cup.

Directions:

  1. Preheat oven to 350F and spray a 9” round cake pan with avocado or coconut oil or line with parchment.

  2. Put all of the ingredients except chocolate chips in a medium bowl and beat with a hand mixer until smooth.  Fold in chocolate chips.

  3. Pour batter into prepared cake pan. Top with extra chocolate chips if desired and bake for 30 minutes.

  4. Serve plain or topped with a coconut butter glaze. Enjoy!

Chocolate Chip Keto Cake can be stored in an airtight container in the fridge for up to one week. Enjoy chilled or reheat slightly before serving.
