These chocolatey overnight oats are super easy to make, taste like dessert, and just happen to be packed with antioxidants, adaptogens, fibre, healthy fats, protein, and pre and probiotics, too.  Doesn’t get much better than that!

What is Kefir?

Kefir is a fermented drink made from milk (dairy or nondairy, including soy, rice and coconut) or water.  This unique probiotic powerhouse has a yogurt-like taste and lots of immune-boosting and disease-fighting benefits.  It contains bioactive compounds that can improve gut & skin health, and may even help reduce the risk of cancer & allergy symptoms.  One compound found only in kefir, known as kefiran, has been found to fight against candida, a common yeast infection.  For more info on probiotics & gut health, see website Food Joy page “The Gut Microbiome”.

Ingredients per serving:

  • 1/3 cup gluten-free old-fashioned rolled oats

  • 1 scoop Nuzest Clean Lean Probiotic Cacao or Smooth Vanilla protein powder

  • 1 Tbsp chia seeds

  • 1 Tbsp Further Food collagen peptides (omit for vegan)

  • 1 Tbsp Organika Maca & Cacao Powder (or substitute 1 Tbsp Giddy Yo raw cacao powder plus 1 tsp Plant Burst maca powder)

  • 1 Tbsp powdered almond butter

  • 1/2 tsp Sun Potion or FreshCap Mushrooms chaga powder (optional)

  • 1 cup coconut or other milk-based kefir (or if prefer less tangy, use 1/2 cup kefir plus 1/2 cup canned organic coconut milk)

  • 1/2 tsp pure almond extract

  • Lakanto sugar-free monkfruit sweetener or sweetener of choice, adjusted to taste

  • optional toppings: trail mix, bee pollen, cacao nibs, homemade granola, homemade blueberry almond chia jam

Directions:

  1. In a bowl or single serving mason jar(s), mix together oats, protein powder, chia, collagen, maca & cacao, powdered almond butter, and chaga. Add kefir and almond extract and stir well to combine. Sweeten to taste.

  2. Cover and refrigerate overnight, or for a minimum of 6 hours.

Chocolate Almond Kefir Oats can be stored in an airtight container in the fridge for 4 to 5 days. Serve with your choice of toppings.
