"TROPI-CAULI" SUNSHINE SMOOTHIE
/I am a bit addicted to cauliflower these days. It is an incredibly nutrient-dense and versatile cruciferous vegetable. Here it is blended with coconut, pineapple and some protein & superfood boosters to make a satisfying tropical treat that will help power you through your busy day!
Cauliflower is low in calories but rich in vitamins & minerals, fibre, and disease-fighting glucosinolates, phenols and other powerful phytochemicals. Because of its low-cal, high fibre status, cauliflower is great for constipation and healthy weight control. It also contains compounds that help to balance hormones and support liver function.
Cruciferous vegetables — a family that also includes broccoli, kale and brussel sprouts — have been getting a lot of attention of late. Studies suggest that these nutritional powerhouses may have a role in preventing chronic illnesses such as cardiovascular disease, diabetes, Alzheimer's, and even certain cancers.
To give this smoothie an optional "superfood" boost, I added baobab powder, which is made from the dried fruit of the baobab tree. It has a wonderful tangy, citrusy flavour and is unusually rich in fibre (including prebiotics), vitamin C, and antioxidants. Baobab powder is packed with minerals, including potassium, magnesium, and calcium, making it a great addition to any post-workout shake.
For 2 servings, blend together until smooth:
1 cup canned organic coconut milk (I use full-fat)
1 cup frozen pineapple chunks
1 cup steamed-then-frozen cauliflower
2 Tbsp Further Food collagen peptides (nonvegan) or Nuzest Clean Lean Smooth Vanilla or Just Natural protein powder (optional)
1 Tbsp white chia seeds
1 Tbsp baobab powder (optional)
1/2 to 1 Tbsp grated fresh ginger, adjusted to taste (optional)
1/4 to 1/2 tsp turmeric powder and a pinch of black pepper (optional)
1/2 tsp pure vanilla extract (optional)
Lakanto sugar-free monk fruit sweetener, pure stevia, or raw honey (non-vegan), adjusted to taste (optional)
optional toppings: toasted coconut chips, bee pollen, or toppings of choice
