BLUEBERRY CHEESECAKE BAKED OATS

If you think a moist blueberry cake with sweet cream cheese filling sounds tasty, this is the breakfast for you!

Honestly, my Blueberry Cheesecake Baked Oats make you feel like you’re having cake for breakfast — only they’re free of added sugar and packed with all the micronutrients (vitamins, minerals, anitoxidants), healthy fats, fibre, and protein needed to start your day off right!

The surprise ingredient in this recipe is cottage cheese. And no, you can’t taste it. It gets blended into the oats so you can’t even tell that it’s there. Yet it adds a wonderful creaminess along with loads of nutrients (B vitamins, calcium, phosphorus, selenium) and protein.

Ingredients for one serving:

  • 1/2 cup gluten-free rolled oats (or 6 Tbsp oats plus 2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder)

  • 1/4 cup plain cottage cheese (I prefer to use 4%)

  • 2 Tbsp unsweetened almond milk or Nutpods sugar-free Caramel creamer or milk of choice

  • 1 egg (optional, but improves the texture of the oats)

  • 2 Tbsp Lakanto sugar-free maple syrup (or pure maple syrup)

  • 1 tsp baking powder

  • 1/2 tsp pure vanilla extract

  • 1/4 tsp salt

  • 1/4 cup frozen blueberries, divided

  • optional filling: 1 to 2 Tbsp whipped cream cheese mixed with ZenSweet sugar-free powdered monk fruit sweetener to taste

  • optional toppings: additional sweetened cream cheese, blueberries (warmed-from-frozen here), or toppings of choice

Directions:

  1. Preheat oven to 350F and grease a large ramekin with coconut or avocado oil.

  2. Put oats, protein powder (if using), cottage cheese, milk, egg, sweetener, baking powder, vanilla, and salt in a blender container and blend well.  Stir in blueberries, reserving a few for topping.

  3. Pour half of the oat mixture into the prepared ramekin.  Add the (optional) cream cheese mixture to the middle and cover with remaining batter.  Top with the remaining blueberries.

  4. Bake for 30 to 35 minutes. Remove from the oven and allow the oats to cool for a couple minutes before serving with toppings of choice.

Blueberry Cheesecake Baked Oats can be stored in an airtight container in the fridge for 3 to 4 days. Enjoy cold or reheat before serving.
