ALMOND BUTTER & JAM CAULIFLOWER PROATS
/Almond Butter & Jam Cauliflower Proats (aka protein oats) are super easy to make and loaded with vitamins & minerals, antioxidants, fibre, healthy fats, protein, and pre & probiotics, too!
Don’t let the cauliflower in here scare you off! This is a simple and delicious way to get some veggies at breakfast. Riced cauliflower adds a great chew and extra nutrients without much flavour. My family is wise to my ways now, but none of my non-family taste-testers could believe this porridge contained cauliflower!
Cauliflower is low in calories but rich in vitamins & minerals, fibre, and disease-fighting glucosinolates, phenols and other powerful phytochemicals. Because of its low-calorie, high fibre status, cauliflower is great for constipation and healthy weight control. It also contains compounds that help to balance hormones and support liver function.
Cruciferous vegetables — a family that also includes broccoli, kale and brussel sprouts — have been getting a lot of attention of late. Studies suggest that these nutritional powerhouses may have a role in preventing chronic illnesses such as cardiovascular disease, diabetes, Alzheimer's, and even certain cancers.
Ingredients for 2 servings:
2/3 cup gluten-free old-fashioned rolled oats
1/2 to 1 cup frozen riced cauliflower (straight from the bag or pre-steamed and chilled or frozen if needed for better digestion)
2 Tbsp Nuzest Clean Lean Smooth Vanilla protein powder
2 Tbsp chia seeds
2 Tbsp unsweetened powdered almond butter
1 tsp pure almond extract
1 1/2 cups unsweetened almond milk (I like to use my Almond Cow to make homemade plant-based milk)
1/2 cup plain probiotic coconut yogurt or plain Greek yogurt
Lakanto sugar-free monk fruit sweetener, pure stevia, or sweetener of choice, adjusted to taste
optional toppings: homemade chia jam (above I used my usual raspberry chia seed jam recipe with the addition of beetroot crystals for extra colour and nutrients) or marmalade, chopped nuts and/or seeds, nut butter, bee pollen, granola, cacao nibs or dark chocolate chips, or toppings of choice
Directions:
Put all of the ingredients excluding toppings in a bowl or divide into single-serving mason jars. Stir well to combine.
Cover and refrigerate overnight or for a minimum of 6 hours.
In the morning, stir and add additional milk as needed for desired consistency.
Almond Butter & Jam Cauliflower Proats can be stored in an airtight container in the fridge for up to 5 days. Serve chilled with your choice of toppings.
