These are little balls of bliss for the body, mind and taste buds!  They are free of grains/gluten and refined sugar but absolutely loaded with minerals, antioxidants, fibre, protein, and healthy fats.

Walnut Wonder Protein Balls are great for snack time or breakfast on-the-go. And they are super easy to make in the blender or food processor with no baking required!

Walnuts are rich in antioxidants, vitamins, minerals, plant-based protein, and omega 3 fatty acids. Studies suggest that walnut consumption may have benefits for mental health and cognitive function.

Ingredients for 12 Bliss Balls:

  • 1 cup raw walnut pieces

  • 12 Medjool dates, pitted

  • 1/2 cup unsweetened desiccated coconut

  • 2 scoops Nuzest Clean Lean Just Natural, Rich Chocolate, or Smooth Vanilla protein powder OR 2 scoops Further Food Collagen Peptides OR 1/4 cup shelled hemp seeds

  • 2 Tbsp chia seeds

  • 2 Tbsp gluten-free flaxseed meal

  • 1 tsp pure vanilla extract

  • optional toppings: desiccated coconut, coarsely ground walnuts, melted white chocolate, or toppings of choice

Directions:

  1. Preheat oven to 350F.

  2. Spread walnuts on a rimmed baking sheet and put in the oven to toast for 5 to 10 minutes, tossing halfway through so they brown evenly. Allow the nuts to cool to room temperature.

  3. Place all ingredients in a food processor or blender container.

  4. Pulse a few times, scape down the sides and bottom with a spatula then blend again until finely chopped and mixed together.

  5. Scrape sticky mixture onto plate or parchment paper and roll into approximately 12 balls. Roll each ball in desiccated coconut or nuts, or drizzle with melted chocolate as desired.

C'est tout!  Enjoy as is, refrigerate until firm, or freeze for a quick snack later. Walnut Wonder Protein Balls can be stored in an airtight container in the fridge for a week, or frozen for up to 2 months.
